Corn Frittata
Fruit Loaf

Pizza

Makes 1 portion

Ingredients

  • 1 wholegrain lebanese/ wholegrain pita bread/ wholegrain English muffin (split)
  • 1 tablespoon tomato paste (no added salt)
  • ¼ cup reduced-fat cheese, grated
  • ¼ small onion, chopped
  • ¼ cup capsicum, chopped
  • ¼ cup mushrooms, sliced
  • 4 thin slices of tomato
  • ½ slice of canned pineapple (optional)

Optionals

  • Chicken, cooked skinless
  • Tuna, drained

Method

  1. Toast english muffins (if using)
  2. Spread base (pita, muffins) with tomato paste
  3. Add toppings
  4. Top with cheese
  5. Cook under the grill or in the oven until cheese melts and base is crispy.
  6. Wait until cool, cut into 4 pieces and wrap tightly in aluminium foil, or put in a lunch container

Tip

  • Any vegies can be added/substituted in this recipe
  • Pack a frozen drink with this if packing in a lunch box

Corn Frittata

Makes 4 portions

Ingredients

  • 4 eggs, beaten
  • 1 cup of canned corn (salt reduced)
  •  ½ cup reduced-fat grated cheese
  • cup wholemeal flour
  • 1 large onion finely chopped
  • cup grated carrot
  • cup grated zucchini
  • cup chopped celery

Method

  1. Preheat oven to 180C
  2. Beat eggs, add flour and mix.
  3. Mix in all other ingredients
  4. Spray a slice tin with oil and pour mixture in.
  5. Bake in oven for 45-50 minutes or until cooked
  6. Allow to cool and store in refrigerator until ready to be taken to school

Tip

Subsitute the vegetables listed for similar quantities of any you have on hand - even frozen.

Fruit loaf

Makes 12 portions

Ingredients

  • 1 cup grated carrot
  • ½ cup dried apricots, chopped
  • ½ cup sultanas
  • 1 medium apple, chopped
  • ½  cup apple juice, 100% no added sugar
  • 3/4 cup water
  • ¼ cup raw sugar
  • 1 cup wholemeal self-raising flour
  • ½ cup plain flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 bananas, sliced thinly

Method

  1. Preheat oven to 180°C. Line loaf tin with baking paper
  2. Place carrot, apricot, sultanas, apple, juices, water and sugar in medium saucepan.
  3. Bring to the boil then simmer uncovered for 15 minutes.
  4. Cool to room temperature
  5. Stir in the sifted dry ingredients and banana. Spread mixture into loaf tin and bake for an hour
  6. Once cooled slice loaf and store in airtight container, or freeze individual portions in cling wrap
