Method
- Toast english muffins (if using)
- Spread base (pita, muffins) with tomato paste
- Add toppings
- Top with cheese
- Cook under the grill or in the oven until cheese melts and base is crispy.
- Wait until cool, cut into 4 pieces and wrap tightly in aluminium foil, or put in a lunch container

Method
- Preheat oven to 180C
- Beat eggs, add flour and mix.
- Mix in all other ingredients
- Spray a slice tin with oil and pour mixture in.
- Bake in oven for 45-50 minutes or until cooked
- Allow to cool and store in refrigerator until ready to be taken to school

Subsitute the vegetables listed for similar quantities of any you have on hand - even frozen. |

Method
- Preheat oven to 180°C. Line loaf tin with baking paper
- Place carrot, apricot, sultanas, apple, juices, water and sugar in medium saucepan.
- Bring to the boil then simmer uncovered for 15 minutes.
- Cool to room temperature
- Stir in the sifted dry ingredients and banana. Spread mixture into loaf tin and bake for an hour
- Once cooled slice loaf and store in airtight container, or freeze individual portions in cling wrap
